The wedding cake

I have been a cake decorator for 29 years, and I have made many wedding cakes, but I have always dreaded making wedding cakes for my own children. I felt that they had to be some fabulous creation that I was not capable of, and that people would be looking at it, and know I made it, and it would be a disaster; however, I knew having someone else make them was not an option.

My daughter wanted a chocolate wedding cake. If you do a search for chocolate wedding cakes on Google, you will see hundreds of examples. We looked, and picked some we liked that I thought I could possibly re-create. I would make prototypes at work and bring them home, and it just as I had feared, they were not that awesome, or well received.

As you can see from the pictures, we decided on fondant, with little swirls and chocolate candies on it. It was inspired by a white one I saw online with chocolate swirls the day before the wedding. The swirls were made much easier by a tilting decorators turntable I found at Michaels while searching for floating candles. The bride and groom loved it.
